Purple
Potato Disc with Smoked Salmon

Ingredients:

Purple Potato, sliced about 1/2” thick
1 slice Smoked Salmon, about 1/2”
1 dollop Crème Fraiche
1 sliver Flower bloom
1 Caviar
Procedure:
Steam potatoes until just cooked.
Add a small dollop of crème fraiche on 1 purple
potato disc. Add a small piece, about 1/2 inch
long of smoked salmon and top again with a
dollop of crème fraiche and add 1/8 tsp caviar
(or what the budget will allow). Garnish with a
sliver of edible flower. I used marigold.
